Trehalose is a new kind of food ingredient and used instead of sugar. It has the highest stability in natural disaccharides.Trehalose can form unique protective film on cell surface to sustain biological characteristics under high temperature,freezing and dry environment or any other bad environments. Sweetness:The sweetness of trehalose is just 45% of sucrose, so it performs well in keeping the original flavor of food.

 

Solubility:The solubility of trehalose is lower than sucrose at low temperature and higher at high temperature.

 

Crystallinity:The crystallinity of trehalose is also better than other sugars against acid environment or the existence with other food ingredients.

 

Decomposability:Trehalose does not decompose acid in mouth. So it won’t lead to dental caries like sucrose does.

 

Glass transition temperature:Trehalose has a high glass transition temperature(120℃) compared to other sugars.This property has unique benefits for extending the shelf-life of various food and biomaterials.
